Cherries, a stone-fruit, are related to the plum and peach family. Washington, Oregon, Idaho and Utah grow the majority of the countrys sweet and sour cherry varieties, but you can also find them in the midstate.
NUTRITION: A half-cup serving of fresh cherries has 45 calories and is a good source of vitamin C.
HOW TO CHOOSE: Choose cherries that have been stored in a cool, moist place. Cherries should be at least one inch in diameter with a glossy sheen and dark color. Buy cherries with fresh green stems still attached.
HOW TO STORE: Store unwashed cherries in the refrigerator in plastic bags or in a single layer on a covered baking sheet. Cherries can also be frozen.
HOW TO USE: Choose from the wash and serve or pit and poach methods. Either enjoy cherries raw, or pit them and then drop the cherries into simmering water for one to three minutes until soft before adding to your recipe.
